Sheet Pan BBQ Chicken and Sweet Potatoes
Ingredients
- 6 bone-in, skin-on chicken thighs
- 3 large sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 cup BBQ sauce (use your favorite brand)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional garnish: chopped fresh parsley or cilantro
Instructions
Preheat the Oven:
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
Prepare the Sweet Potatoes:
- In a large bowl, toss the sweet potato cubes with 2 tablespoons of olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread the sweet potatoes evenly on one side of the prepared baking sheet.
Prepare the Chicken Thighs:
- Pat the chicken thighs dry with paper towels. Rub the remaining 1 tablespoon of olive oil over the chicken thighs, then season with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Place the chicken thighs on the other side of the baking sheet, skin side up.
Bake the Chicken and Sweet Potatoes:
- Place the baking sheet in the preheated oven and bake for 25 minutes.
Add the BBQ Sauce:
- Remove the baking sheet from the oven. Brush the chicken thighs generously with BBQ sauce, then flip the sweet potatoes to ensure even cooking. Return the baking sheet to the oven and bake for an additional 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the sweet potatoes are tender and caramelized.
Optional Garnish:
- If desired, garnish the chicken and sweet potatoes with chopped fresh parsley or cilantro for added freshness and color.
Serve:
- Let the chicken rest for a few minutes before serving. Serve the BBQ chicken thighs alongside the roasted sweet potatoes.
